Sue Becker: USA is now one of the sickest nations in the world because of commercially processed food, particularly bread

In a recent interview, food scientist Sue Becker uncovered the dark history of modern flour. She explained how industrial milling removed the bran, germ, fibre, vitamins, minerals and essential oils from wheat to create a softer, longer-lasting white flour – and how many of those valuable byproducts ended up in animal feed.

 

The interview explores the rise of “enriched” flour, bleaching agents, nutrient deficiencies, gluten intolerance, digestion, stomach acid, celiac disease and the difference between store-bought flour and bread made from freshly milled whole grains.

 

In 1992, Sue Becker started The Bread Beckers, a kitchen equipment and natural foods supplier in Cherokee County, Georgia, USA, which also offers nutritional education through classes, books and online resources.

 

At the end of July, she joined John Lovell on the War Poet Society podcast. During the interview, they discussed: what industrial milling removes from wheat; why white flour became food for the masses; how “enriched” flour got its name; why gluten may be taking the blame for a larger problem; the connection between fibre, digestion, cravings and energy; why bread carries such deep significance throughout Scripture; how to select wheat and begin milling flour at home and personal stories from people who changed the bread they ate.

 

“In 1900, we were considered one of the healthiest nations in the world. You can see it drop, drop, drop, drop to now, we’re one of the sickest nations in the world,” she said.

 

“I learned [that] most of the common diseases that plague Americans are directly related to commercially processed food, particularly our bread … It’s not gluten. It’s the processed white flour.”

 

All the healthy stuff has been filtered out of the white flour. “Vitamins, minerals, and then most importantly the fibre,” she said.

China is using the Middle East as a testing ground

Michael Doran, the Director of the Centre for Peace and Security in the Middle East at the Hudson Institute, has long argued that China is using the Middle East as a strategic testing ground to challenge US interests and expand its global influence through military partnerships and diplomatic leverage.

 

Last week, during an interview on John Anderson Media, he explained that China is covertly arming Iran, testing America’s resolve, weapons and strategy ahead of an impending confrontation over Taiwan.

 

“The Chinese have been supporting the Iranian missile capabilities. They’ve been helping them to develop it both by providing key components for the manufacturer of the missiles [and] also targeting data [such as data from satellites],” Doran told former Australian parliamentarian John Anderson. “They’re [China] using the Middle East as a laboratory to see how the United States defends itself against these things.”

 

“There are only three entities in the world that have anti-ship ballistic missiles. That’s Iran, the Houthis and China. China is providing these weapons to the Houthis and Iran because an anti-ship ballistic missile is a weapon used for only one thing – and that is attacking an American aircraft carrier.

 

“So, the Chinese want to understand how our Navy responds to all of these weapons so they can fight a better war in Taiwan.”

How a Review Paper Became a Dietary Guideline in Three Days

Within hours of publication, headlines around the world confidently declared that eating less protein could help people live longer:

 

“Protein Restriction Improves Metabolism and Longevity”

 

“Rethinking Protein: Less may be more…”

 

“Eating less protein could slow aging.”

 

“Less protein may be more for healthy aging.”

 

“Eat less protein, age better, live longer.”

 

“Eating too much protein could age you faster.”

 

“Protein Restriction May Promote Healthy Aging and Longevity”

 

The news aggregator, Ground.News tracked more than fifty news organizations carrying some version of the story, with many of the top headlines, even in scientific magazines, making outrageous claims. To the average reader, the message was unmistakable. Science had spoken. The advice was simple: eat less protein.

 

There was only one problem. That is not what the paper actually demonstrated.

 

The publication was neither a clinical trial, a systematic review, nor a meta-analysis. It presented no new human outcome data. Instead, it was a narrative review, one that assembled existing research into a proposed biological framework the authors called the “hallmarks of protein restriction.”

 

That distinction matters.

 

Narrative reviews are designed to generate hypotheses, organize emerging evidence, and stimulate further research. They do not establish clinical practice. Yet within days, an interesting scientific hypothesis had been transformed into what sounded like a new dietary guideline. A guideline that became an article in almost every major news organization in America.
