Anon has a theory about that. I'm tempted to spell the thing out with a wall of text, but y'all would just filter that and move on. So here's the summary:
When Christianity became the state religion of Rome, there weren't enough Christian church leaders, so Roman priests and pagans were drafted to fill the role. They were quickly converted without a lot of training, so they filled in the gaps with their prior rituals and dressed them up to be plausible to the new regime. That became Catholicism.
