Thank you for the always excellent work baker. Just letting you and any lurking bakers know I'll be available to bake a good stretch of hours anytime between now and 2am ET today, or to assist/fill smaller gaps here and there. (We got some much needed rain up here, cleared out the smoke, so my energy's back.) Meantime I'm working on other QR projects, keeping half an eye on the breads in case needed.
I saw earlier that we have at least a couple bakers just out of baking school which is fantastic. If anyone wants to practice late night when bread's slower, I'm happy to spot/assist.
