It's about keystrokes being submitted and recorded in real-time.
Google searches and emails in the drafting process are submitted key by key in real-time (run a wiresharke…).
If they're being transmitted real-time, they're being stored too.
Whne the email is sent, I'm guessing that drafts aren't deleted as part of the sent message.
Instead, they are 'flagged' as deleted in a way that really only flags them as hidden to the user.
