Not only does gluten play a part with gut inflammation but maybe more to blame for the situation is the industrialization of the process of bread and the use of quick rise yeasts. A narrow selection of yeast strains used that doesn't allow enough time for the breakdown of gluten (quick and dirty explanation). This is explained very well in a series called "Cooked", ep. 3 - Air. The whole series is very well done and explains a lot more than gluten.
