Yes, Jesus knew exactly that he was to be sacrificed on THAT Passover. There are 300 prophecies in the old testament about the Messiah. He fulfilled all of them. He was brought in to the city when the lambs for Passover were brought into the city by every man of age in Israel required to be at the temple with a lamb to sacrifice on behalf of the family. Jesus was hanging on the cross at the exact time that the lambs were being sacrificed in the temple. That is why he carries the title "Lamb of God"
No, Judas was told not to turn Christ in for Crucifixion during the the Passover weekend because Jesus was too popular with the Jewish people, and had thousands of people following him around who loved him. They wanted to wait until the crowds went home to kill him.
Judas had no intention of leaving to turn him in that night, so Jesus had to make him by accusing him of what he was doing during the Passover meal.
Judas RAN out, figuring somehow Christ knew about the plan, hoping to get Jesus arrested before Jesus could leave. Jesus forced the issue, and forced Judas to act to get his 30 pieces of silver for doing the job. He did it to make sure the prophecy was fulfilled.
Yes, Jesus knew his ending, but not all along. He did know by the time he was old enough to read the prophecies about himself in the Old Testament Tenakh and was aware of all of the fulfillment that had happened, like where he was born, the Shepards at night, being taken to Egypt, King Harrod killing all the babies in Bethlehem to murder him for sure, etc. His mother also told him bits. But after he was baptized, God let him in on his entire plan. That is when he began his ministry. He knew he did not have long. He was almost killed a number of times.
