"Alkaline diets" can be beneficial, not not for the reason for affecting the bodies pH. Every enzyme in your body requires that pH be kept within a very narrow range despite the wide range of food that humans eat. So the homeostatic systems that regulate this must be very robust. Food won't affect it much.
pH refers to parts Hydrogen ion concentration. Nothing to due with oxygen levels. This is high school chemistry.
