The earth is round. Ships far away enough to be partially over the horizon are "hull-down", you can only see their masts. They get closer, you can see masts and upper structure. They get closer and now you can see the entire fucking ship sitting on top of the water. That's called "hull-up".

 

You can actually go higher on the ship you're viewing from and see more. Go lower, see less.

 

If the earth was flat, you'd see the whole ship regardless of the distance, once it became visible.
