The "joke" is that he uses rational arguments which are valid from an economic point of view but ignores the fact that the parents would never kill and eat their children because they love them.

 

The point is to shock people by presenting a view in which human life is not sacred. He wanted to provoke a shocked reaction because he thought that doing so was delightfully funny.
