We know only because we still have the original texts to compare the newer copies to. Modern translations are based on these. But you wouldn't know there was a difference because the 'changes' are so minor and do not affect the core doctrine.
Most abortions happen early. And even if most happened later in pregnancy there simply isn't a significant quantity of tissue for anything other than scientific research. This is why I think the connections that some are drawing between abortion clinics and the Ambrosia blood-transfusions are crap. The amount of blood that could be collected that way (not to mention the inadequate preservation) is not enough to do anything with.
As for the flavoring industry thing, we've been over it a hundred times: fetal cells are/were used in laboratories where they search for new compounds to use as artificial flavors (think taste buds on a chip, sorta). But after then find some, they do not use fetal cell cultures to synthesis these new compounds on an industrial scale. This slide is an attempt to trigger emotions, detach us from our logical thinking, and hopefully get us to parrot the idea in public and (rightly) look crazy to the normies.
