For this to be great, not just average, scramble eggs ratio: 2 whole eggs + 1 egg yoke. Put a little olive oil and a dab of butter in pan under med. heat (can use higher heat when cook gets used to it).
Whip eggs mixture with hand held whipper and pour into skillet. Use soft plastic spatula (shaped like what is used with cake batter, rectangular with a slight spoon shape). While egg mixture is cooking keep stirring with spatula, slowly, around the corner of the pan, then under, turning over, until scrambled eggs are cooked and still moist.
