That's exactly what happens.
Two transverse waves intersect
in an interference zone,
whereby their peaks and troughs
exactly cancel each other out.
But that energy does not disappear.
No, rather, an amplitude peak occurs
in an orthogonal dimension –
the time dimension.
(Or maybe some other … never was quite clear on this … but it is reasonable to model it as time.)
And there are other physical systems
that can produce the same phenomena.
