Paul is claimed to be born Hebrew, taught by the head priest in the Law which is written in Hebrew. Therefore, Paul's native familiar language is Hebrew.

Matthew, born Hebrew, grew up speaking Hebrew, wrote his work in Hebrew which was converted to Greek.

Why then is Roman's written in Pure Greek?

Because the writer of Romans is a native Greek Speaker and is not familiar with Hebrew.
