I haven't seen any people shot IRL, but I've shot / seen shot a lot of animals. In my experience, blood sometimes gushes / splatters. Other times you get nice clean punctures with hardly any bleeding.
In High School agriculture class our teacher was demonstrating how to kill a hog for the class. All the kids were lined up along the fencing. Shot one, right between the eyes, pissed the pig off. It started running around squealing. Not a drop of blood. The girls (and some of the boys) started getting kind of sickish. Second shot at the frantic pig missed the head hit body. Trickle of blood, no splashing. Finally the teacher went and got a bigger calibler rifle. By then the pig had laid down. Another shot between the eyes finished it off.
None of the kids, just feet away from the pig, got any blood splash. There simply was none . . . not until the teacher stuck the pig in the neck.
