I would argue that the establishment has it completely backwards as usual. Ketosis is NOT the adaptive state; it is the default state.
In any temperate climate in our evolution, fruits, nuts, vegetables (carbs) were only available for a short time, maybe 10-12 weeks during the year. This immediately precedes WINTER, when more fat stores are needed (and the body returns to ketosis after the carbs are no longer available).
This is why carbs cause the body to store fat, trigger cravings to induce overfeeding, etc.
Keto saved my life (Drs orders) when I was borderline diabetic. Not my choice/not in a cult.
