Pic1 is beautiful and readable.
The placement of text on pic 2-3 is problematic.
I suggest putting all the text either above or below the treeline, but not overlaying it.
Plain black text (no outline) might work if placed in the sky or in the lake. If the text doesn't fit then perhaps there are too many words for the space or the font size is too large.
Graphical elements need space around them to "breathe". There are many websites offering graphic design advice to help us learn. Here's one at random
