Day bakers, night bakers, weekend bakers, backup bakers and especially 3 - 9am ET (8am - 1pm EU) bakers are all required.

I saw two new bakers try it out yesterday, they both did very well.

From memory, I think we only have 10 or 11 bakers currently throughout all shifts, so even before now we always need bakers.
