Make it something special, unique in each case so the establishment will be the only place in town to get it. Don't worry about hearing "No." No simply means to keep calling. You will get orders.

Taking this a little futher, go online and check the menu at a few posh botique coffee shops or places in Southern California. Figure out what the hot items are. Learn how to make what they make. Then call the shops in your area and tell them such and such an item is coming to your town and will be offered in only one place in town, by contract even, and ask them if they want to be the place to have that item or do they want someone else to be the place. Offer them exclusivity to it.
