Everyone's body works like that. Our cells run on glucose (sugar) exclusively. To use any other energy source it has to be converted to carbs.

Cholesterol is a structural component of animal cell membranes. It comes from meat, not simply fat. You body produces as much as it needs and dials back production when you get some of it from your food. But this takes a few hours. So eating a huge steak cause a brief surge in cholesterol levels before your production mechanisms can respond. This happening on occasion is fine. But having it yo-yo up and down everyday for your whole life isn't healthy. On the other hand, if yo have a small steady intake of meats then you own cholesterol production will compensate and you overall levels will remain normal.
