It seems the only viable way the Earth could be flat would be if the South Pole were fake. Relatively small numbers have supposedly been there, but maybe that is faked. So far so good. But the flat disk would need to either be surrounded by untraversable ice, either due to distance or mountains or walls.

But… ALL travel times in the supposed southern hemisphere would be screwed. The "southern hemisphere" would have to be much larger than the northern since it would encircle it. Pretty much EVERYONE who has travelled long distances in the southern hemisphere would need to be in on the conspiracy.

Another thing that makes Flat Earth one of the most inherently implausible conspiracy theories is that it is NOT generally true that people used to believe in a flat earth. This was something concocted in modernity to discredit the medieval church, which had officially endorsed a neo-Aristotelian cosmology with the Earth at the center.

Actually, the genesis of the "flat earth" story is a good intro into how popular history really does get falsified, since I suspect many "educated" people really do believe that the "flat earth" theory was widely believed prior to Columbus.
