Corn has to dry out before it can be shelled. If the moisture level is too high the kernel will smash up in the combine. Moisture level is monitored until it gets to optimum level, only then is it shelled/ harvested.

Silage is the most economical way to feed corn to livestock. The whole plant is chopped up and stored for winter feed. Shelling with a combine leaves the stalk in the field as does growing sweet corn for sale.
Forgot to add, silage is chopped while the corn plant is still green. Shelling is done after the corn has dried down.
Cut it off the cob, as in fresh sweet corn OR in the old days they would go cut the stalks by hand to harvest, it was called cutting the corn
