I just looked it up. 4 units of blood contain a gram of iron, so we can say ~2 grams per person.

400 enemies would be 800g, or 1.76 pounds. After the other steel ingredients are added in, round it up to 2 pounds, which seems a little light. A sword made from the blood of a thousand enemies would be perfect.
