Pretty sure those people were already hella drunk and Jesus just watered down what was left of the wine, and the drunks were just too fucking drunk to know the difference. Remember, those lushes drank moar than what was expected, so it's reasonable to assume they didn't know any better after that point. The watered down wine would actually taste significantly better, since it wouldn't be nearly as sour, and it was hydrating.
Not to downplay the "miracle". But it can easily be explained, using logic, given the information that's available.

Pretty sure wine works the same way now as it did back then. ie. You drink too much wine your gonna get drunk.
FYI, just because a person was featured in a Bible story, doesn't automatically make them "Holy". There was plenty of fucked up shit that happened back then, just as it continues today. If people weren't so fucked up to begin with, we wouldn't need these religions to try to teach them how to be decent.
