Anyone who reads the bible can come up with their own bizarre fanfic; look at any protestant sect. The scripture needs to be tied to the tradition in proper context.
Then by following the words of Paul are you not doing the same? Paul partook in the breaking of bread; that "human tradition" because it was established by Christ. He was teaching against heresy and wordliness.
Proper philosophy always leads to God, from there one finds the revelation of God in Christ; we have more than his words but his traditions. The Church to this day does exactly as He instructed: eat my flesh and drink my blood or you have no life in you. And, "do this is memory of me"

God certainly exists. From there you can define a lot about him purely through logic but not completely without the revelation of God Himself; through his Son. All St Aquinas did he equated to nothing in the end compared to the fullness of God
