Another great immune booster is beet kvass
Remove the top and tail of organic beets and gently scrub (peel if conventionally grown). Chop not 1-2 inch pieces and place in the bottom of a sterile jar. Add spring water (1 tbsp good quality salt per litre of water) ensuring beets are completely submerged. Let sit for 5 days on the counter (less if you are in a warm climate).
When ready pour the liquid fraction into a sterile jar and refrigerate. The beets can be fermented a second time using the above directions or they can be eaten.
