here's the loaf I make:

700g Bread flour

15g salt ( to taste)

15g instant dry yeast

60g butter ( you can use oil but butter tastes better)

400g water

 

Put all the dry ingredients into the mixing bowl & stir with the back of your wooden spoon. you're just distributing the dry stuff.

Melt the butte & put into the bowl, mix. you might want to crumb the butter with the flour until it distributes.

put in the water, about 45 deg C. Mix with the back of the spoon until all of the flour has combined. knead for at least 8 min, that's how long gluten takes to form in a batter.

Take your baking pan & spray it with a cooking spray. Put the dough into the pan & let it stand in the oven for about 40 min. Then kook on 200/210 C ( depends if you want a crunchy loaf or not) for 40 to 50 min. let it cool & enjoy your loaf!

 

Ifound out recently that instant dry yeast idoes not need activation & only requires one proving. Anyway; I've made this bread for about 1 year using this formula & it comes out exactly the same every time! soft (the butter does that) & nice & high. ENJOY!

 

Yes, I am an artisan baker as a hobby.

The baker's ratio is flour=700g, Salt=2.1%, Yeast=2.1%, Butter=8.5%, Water=57%. It's known as a 57% hydrated loaf.

 

The %'s are referring to the weight of the flour. So you can make any sixze loaf using the formula. Have fun.

 

BTW, choose a flour that has no soy in it! Only one flour in my area is without soy so that's the one I use. If you can get natural, non-gMO stone ground flour, you're in for a treat! It also works with cake flour if you are in a pinch.

I have a friend that has lost 60% of his business since the beginning of the month as the companies he supplies have put their staff on work-from-home so there is no more training until after the Wuflu has passed. The President in ZA, Cyril Ramaphosa, has not indicated if there will be any financial aid for business over this time. Ja, I'm SAFAnon. Lekker safe bru.
