You're on Corona-time. Learn to make sourdough bread. To capture the wild yeast and make them your helper mix:

  • 50% water 50% flour by weight

  • Day 2 dump out half, add half back in (50/50 water/flour mixture)

  • Repeat for a week to 10 days

 

Will start to smell nice and get bubbly. Bake sourdough bread (makes 2 loaves):

540 g bread flour

540 g sourdough starter

255 g water

16 g salt

 

Mix ingredients, let stand 10 minutes, knead until no longer sticky (DO NOT ADD MORE FLOUR), cover & let rest about 4 hours.

 

Punch down dough, cut in half, roll into tight ball, add to floured bowl, cover & let rise until doubled or pop in fridge and bake it next day (delayed fermentation adds great flavour).

 

Bake covered at 450F for 20 minutes, uncovered 425F for 30-40 minutes (until nice and browned).

Sourdough bread is better for you (lower glycemic index).

Sourdough bread lasts longer without preservatives (due to acidity).

Sourdough bread won't burn easily allowing you to make the best grilled cheese, panini, etc.

Sourdough allows you to capture wild yeast and put them to work.

 

While you are on lock down give it a try you won't be disappointed.

I hear you there are faster ways of making bread, but this anon learned how to make sourdough bread 2 years ago. First time making bread in my life. Turned my bread world upside down.

If you have some free time and the inclination give it a go. I'm a retard most days and I figured it out.

It blew my mind on this bread journey that store stuff is pretty much cake and that I could make my own bread that tastes better with zero added sugar.
