pH is how your brain knows how much CO2 is currently dissolved in your bloodstream (carbonic acid) so it knows how fast you need to breath. If you notice you feel calmer for a few minutes after drinking a big glass of baking soda in water then that's probably your breathing slowing down so as to hold back some CO2 to compensate. The sodium is raising your blood pressure just like of you ate too much salt.
Baking soda will hove no effect on your blood's pH. Not much and not go long, anyway. Your body is far good good at regulating it for what you eat/drink to do anything.

That's when everything goes very wrong. If yout pH drops into the acidic range you're gonna have bigger problems than cancer.
