wow, baker - for a sleepy guy, you do good work.
Suggestion: It's hard to "desert" a bread once it's past 400. So if I take a bread that starts around 2 am ET, I only plan on doing half and ghosting around 300-400 (latest). That gives enough time for another baker to come in–or an anon to get set up to bake.
