Oldanon remembers as a child growing up in an Appalachian dirt street down. We hunkies had Macaroni Street. Our farmers would slaughter our pigs, take what we need, and sell the rest to the Italians. Never could give them enough. They went to the big city and got more.
As an old Italian told me: we keep everything but the squeal. They would cure pork. Bacon, sausages galore. Some of us had smoke houses. There we always good natured arguments about what is better? Italian sausage or keilbasa.
We bought and sold from each other. There was no government regulations. Then government came into the picture. What you make in your own kitchen must meet government specifications. Needed total stainless steel kitchens, must pass inspections.
Fucking government ruined the best part of living. They ruined our food supply.
