Anon dropped a KILLER meatloaf recipe on here a week or so ago - we were talking pecans (GA anon I think). Used Walnuts instead (all we had) and it was spectacular!
The Sriracha was noice on a slice. Froze extra slices from the loaf, easy to re-heat for lunch. All frozen items, so works great. Making again tomorrow. nom nom nomโฆ
Turkey and Spinach Meat Loaf
Ready In 40 minutes
Serves 4
Ingredients
1 1/2 Cups Pecans (made with Walnuts โ was great)
1 Pound Lean Ground Organic Turkey
1 Package (10 ounce) Frozen Spinach thawed and squeezed dry (can skip thawing & squeezing, simply break up frozen spinach and incorporate)
2 Eggs
1 Tablespoons Extra Virgin Olive Oil
1/2 to 1 Small Onion diced
1 Teaspoon Dried Basil
( add other herbs to suit Thyme, etc.)
1/4 Teaspoon Sea Salt
1 Pinch Black or White Pepper
Preparation
Preheat oven to 375 degrees.
In a food processor, grind the raw pecans/walnuts to a medium-fine texture.
In a large mixing bowl, combine ground nuts with remaining ingredients. Mix well. Place into an oiled loaf pan and bake for 30 minutes (preferably, use thermometer to reach internal temp of 165 deg, especially if starting with frozen spinach, and/or stoneware loaf pan).
Remove from oven and allow to cool for 5 minutes before serving.
