One thing above all, in whatever you do- BE VERY CAREFUL.
Collect as much proof as you can and SAVE OFFLINE/OFF DEVICES ie ext hdd/SD/etc
Make sure to check with your local laws and regulations that the kind of evidence you are collecting isn't violating any laws, for example, in some states, it is illegal to record others without their knowledge, and so on.
I feel the most important thing to do is to keep a timeline of such events as detailed as possible.
