I will add this caveat though, although I have seen Doc do some questionable things as baker, I have also seen him perform great under pressure, and Q appears to post on the board while Doc is baking than anyone. At the same time though Doc seems to hold the bake for many many hours a day. Generally he offers to hand off at the top of every bread, today is the first time I have seen him or any baker refuse a hand off.
