Fishy = low quality fish

 

Salmon that is "fishy" is salmon that has been around for awhile. It's been frozen for a long time.

For less "fishy"-ness, look for the freshest possible quality salmon or fish that you can find. I know it is hard for those of us that live in the midwest, but I can get some fairly fresh fillets from my local HyVee grocery store.

For cold smoked salmon, I am looking for a good wild caught salmon fillet.

For hot smoked salmon, I usually will use a farmed salmon.

I never take the skin off, it helps with the salmon not sticking to the grill in the smoker.

Fresh caught salmon is the BEST!

I need to go salmon fishing sometime.

 

But, I do know that if you get frozen salmon and if it is really mushy after you dethaw it, that salmon isn't the best of quality to be using for cold smoked lox.

I believe Epstein did have blackmail tapes or evidence that he had locked away at his Manhattan town house.

Epstein got roughed up one time in jail where he almost died. Story was that he tried to kill himself and his psycho mass murdering ex cop saved his life? And psycho cop had a cellphone?

Psycho Cop was hired to stiff arm Epstein into spilling the beans and giving out info of where to find and how to get to that information.

Then, there was a Black Out in Manhattan, that included Epstein's townhouse.

Then, shortly after the blackout…Epstein kills himself.

My set up is different than this guys, but I was thinking about this setup to improve the system I got.

The key is to keep your fire and wood far away from your smoker, so that only the smoke makes it to your smoker…no heat or very little heat.

Right now, I am using an old BlueMountain smoker with a Big Kahuna cold smoker set up.

My complaint with the Big Kahuna is that the fish aquarium aerator doesn't really work all that good. The Big Kahuna works better if you just leave that aeration cap off the bottom. But then I have to keep a pot of water underneath to keep the hot ashes and cinders from falling out on the ground and blowing around the yard in the wind (don't want a fire to sprout up). So, I was thinking about a set up pretty much exact as what this Chinese guy made for himself.
