Fishy = low quality fish
Salmon that is "fishy" is salmon that has been around for awhile. It's been frozen for a long time.
For less "fishy"-ness, look for the freshest possible quality salmon or fish that you can find. I know it is hard for those of us that live in the midwest, but I can get some fairly fresh fillets from my local HyVee grocery store.
For cold smoked salmon, I am looking for a good wild caught salmon fillet.
For hot smoked salmon, I usually will use a farmed salmon.
I never take the skin off, it helps with the salmon not sticking to the grill in the smoker.
