VEGAN MEAT RECIPE
1/2 cup Brown Rice
1/2 cup Wild Rice
1/2 cup Quinoa
1/4 cup Chia Seeds
1/4 cup Lentil Beans
1 can Chickpeas or 1cup prepared Chickpeas
4 cups water or vegetable broth
1 lb mushrooms chopped
1 can of black olives chopped
1 onion diced
1 sweet potato diced
1 beet diced
4 cloves of garlic
4 tbsp soy sauce
2 tbsp Bell's or Poultry seasoning
2 tsp sea salt
2 tsp black pepper
Using a large dutch oven type of pot (5 quarts), throw all ingredients together.
Set oven at 250 degrees F.
Cook in oven for 3 hours.
Remove from oven, and take a potato masher and mash everything together, or use a food processor.
This mixture can be eaten as is as a stuffing side dish, or formed into balls or patties as a meat substitute.
For a VEGAN burger, you may have to add some vegan egg substitute to help bind the mixture.
