Cook anon here. Time for a recipe. Buy you some pork steaks (blade, from the shoulder, they weigh over a pound each). Trim them cutting out the blade and big fat (leave in the small fat). Cut into pieces, like 2" X 2" inches, or smaller. Then use a hand hammer, with notched side and pound them out; Reduce thickness by half

 

Then put in bowl one egg yoke and cream. On a paper plate put on flour. Take out a rolling pin and grind up a dozen townhouse crackers for breading. Coat meat pieces with flour, then dip in egg yoke/cream mixture, then in the crumbs. Set of fridge.

 

Meld under low heat, 1 sick of butter at 1 1/2 setting on electric stove burner for 10-15 minutes. Skim off foam from the top and pour into large skillet making sure you don't get the solids at the bottom. (clarified butter oil).

 

Then takem1/2 lemon. Squeeze juice out and using a fine grater, grate the rind. Reserve. Put the meat into the skillet under high heat browning one side. Turn over and reduce heat to 1 1/2 setting. Cover and let simmer for 15 minutes. Turn over and simmer for another 10 minutes.

 

Take of burner, turn up burner to high. When you see red put skillet back on the burner and throw in the lemon juice and grated rind. Stir for 20-30 seconds, put in a plate and enjoy; You could also add some capers.
