KETO LOAF
1 loaf pan
parchment paper to fit pan
cooking spray
2cups walnuts
2cups almonds
2cups pumpkin seeds
2cups coconut flour
2cups flax seed
2cups sunflower seed
1cup chia seed
1cup sesame seed
2tsp sea salt (I use Celtic Sea Salt)
10 eggs
1cup olive oil (or coconut oil)
Preheat oven to 325 degrees F.
OPTIONAL: put all nuts and seeds into blender first and grind into a course nut flour.
Mix all nuts, seeds, eggs, oil, and salt together in a bowl.
Lightly spray a loaf pan with cooking spray and line it with parchment paper.
Put nut dough mixture into loaf pan.
Place in preheated oven for 1 hour.
Remove from oven and let loaf cool thoroughly before removing and slicing.
This recipe is good for one large loaf or two smaller loaves.
I use it with cream cheese and smoked lox in place of regular bread or bagels. YUM!
