There are a LOT of ways via javascript etc to uniquely identify browsers and such. Analytics scripts and that kind of thing are in almost every webpage you visit, and so are ads. Even if you're not signed in to Google/FB, if one of their scripts is included in the page you view, they know you've been there, at least down to your IP or unique browser identifier (including operating system, monitor resolution etc). You definitely don't need to be logged in for them to build a profile about you.

Just an addition..

I'm sure they have much more clever ways than the things I listed. An example might be timing-related methods, measuring how long it takes your browser to process/render certain elements, like a benchmark, and using those timing stats as part of the unique profile of your browser.
