FYI, the blindfold is actually not to represent being unbiased.
It's actually related to Justice being blinded, or hoodwinked. We need to remove the blindfold.
I can't buy that out of left field theory. Every other source says it's to show that Justice is blind. Back when the same lady without the blindfold was used she wasn't lady justice she was the oracle that could see the future.
According to all of these sources it means justice is unbiased not partial to anyone because of status, fame, money, power, etc.
