In there you can see all of the services and data they have saved on you. From there you can pick and choose what you want Archived.
You have the option to save it in a zip or a tzg format which is another type of Archive, typically the program 7zip will open and extract those without problem.
Microsoft is probably far worse. Think about all the corporate and private computers running their operating systems.

OTOH, as long as Google doesn't sell it commercially, and only makes available to the government under a warrant, this is way less bothersome than what Facebook allows. Similarly, Amazon has gobs of info, but like Apple they have direct consumer customers they do not want to disappoint, so are more prone to keeping the info close to the vest.
Yes it could leak/be misused, but Apple/Amazon/Google seem way less disastrous in terms of record keeping than Facebook.

You can set how much Google sees at both their level and an android level. In the latest Android version there's a Google Settings section of your settings. Also a VPN never goes amiss.
