The point was that the local clergy was corrupt and power hungry, earned the haate of both god and dracula, so wasnt protected by god when things happened.
You can see a difference in clothing between the thughs and the actual priests, religion at large isnt muh ebil, nor is the catholic faith, but the clergy of wallachia was corrupted and abandoned god.

Wich is precisely what they did, specially the lengthy part of the demon speaking with the corrupt priest.
He goes on a lenghty explanation as to why the acts of the corrupt clergy had disgusted god, therefor stating that god is good in nature and protect those loyal to him, indicated by the holy water being actually effective in the first place, along with silver and salt.

But they did not, again, the priests that made the holy water were part of the official clergy, not the armed thughs that the corrupt wallachians had running things, and god is painted with a possitive light.
Trevor at the beggining is extremely butthurt about being excomunicated, but by chapter 4 you can see him acting heroic and using actual holy tools.
