Te real answer is to learn how to put a custom rom firmware on your device that does not include GAPPS.
ie- ditch googles firmware for aosp or something similar.
DO NOT load gapps.
The google apps framework is built for surveillance.
Apple phones are not fixable in this manner; Apple has the firmwares locked in a differnet way than the andriod platform, so there are no custom roms.
my suggestion would be to research the firmware you like, and then get a phone that supports it.
I did the original "Your GAPPS leak" Edition post.
You can get the stock firmware to tell you it has no access…. But I don't believe it.
I've got an iphone xs hanset right now that I'm testing. Have been unable to do much in the way of that firmware, other than never log into a user account on it.
But that's not much in the way of protection.
