Here is the response I got from Paddy Power in the UK.
Hi Anon, we're sorry to hear of this issue. This market has been settled on the candidate that has the most projected Electoral College votes won at the 2020 presidential election. As Biden has received 306 of 538 electoral college votes, we have settled this as a win for Biden and the market won't be unsettled. Apologies for any inconvenience caused.
Please find our settlement rules to this effect on site for reference: https://paddypower.com/aboutUs/Betting.Rules/#Politics…
Presidential Election
a)Winner
This market will be settled according to the candidate that has the most projected Electoral College votes won at the 2020 presidential election (or any presidential election thereafter). Any subsequent events such as a 'faithless elector' will have no effect on the settlement of this market.
In the event that no Presidential candidate receives a majority of the projected Electoral College votes, this market will be settled on the person chosen as President in accordance with the procedures set out by the Twelfth Amendment to the United States Constitution.
b)Electoral College Markets
This market will be settled according to the popular vote won at the US presidential election and the respective projected electoral college votes. Any subsequent events i.e. a ‘faithless elector’ would have no effect on the settlement of this market.

Same thing as Betfair, Paddy Power are also going on "projected electoral college votes" despite the fact there are still ongoing legal issues.
This was their response to my rebuttal.
Paddy Power: The bet settlement will not be changed.
Paddy Power: We hope we were able to resolve your issue, please provide your feedback by selecting a response to the survey.
I made sure to give them a 0.
