I'm not the anon you asked, but I use the Linux Mint iso (with xfce) in a virtualbox.
Mint is debian based like Ubuntu. If you have some experience, building a plain vanilla VM with a debian netinstall iso is quick & dirty. Just choose a light graphical environment when the option comes up in the install.
