Know a small butcher shop owner who can get lard. over 4 decades ago I got a chance to live 2 houses down from my Italian baseball coach when I was a kid, was friends with his son. One thing led to another and her we are, out picking mushrooms. Then driving close to 2 hours to the Amish who still slaughter pigs with the skin on. Then came the prosciutto's. For 5 years we did than. Even built a smoke house. He died, my son went off to college and haven't done anything like it since. Do you know that there are 3 ways to cure meat without refrigeration which would last almost a full harvest season?

I believe we are talking about the same thing. Canning: You put what you're canning in a 1/2, 1 or 2 pint canning jar and tighten up the lids. Then you put those sealed jars in a big boiling pot. That's called a water bath. It's quicker, and produces a much better product, it you do the water bath in a pressure cooker.

Grew up in a dirt street coal mining town. We had kids who would catch a insect, a butterfly was the worst. They would cut the wings off. We little kids told jumped up and yelled at them. The older kid was overcome. Looking back on it, the older kid was most likely not a psychopath, because the 2 or 3 we stopped never did it again.
