yeah, if you cook your veggies to mush, then you will destroy the vitamin C along with every other compound with any nutritional value. but if you lightly steam them, there's no problem. likewise, it is possible to cold-pack veggies or fruit by quickly blanching them with boiling water rather than prolonged cooking. btw, it's NOT the heat that destroys the vitamin C, it's the presence of other enzymes in certain veggies/fruits. heat accelerates all chemical rxns. it also denatures those destructive enzymes, soโ€ฆ reality is never quite so simple as abstract theory.

didn't mean that anyone should not take C.

even consuming fresh picked fruits and veggies, it's nearly impossible to get a healthy dose of C.

it has to do with our evolutionary past, and the fact that humans are descended from the aquatic ape.

also explains why we are the only mammal that does not make our own vitamin C in our liver,

and why we are the only mammal with an extraordinarily high need for iodine. both C and iodine are plentiful in seaweed.

we are also the only ape with a subcutaneous layer of fat, the only ape that instinctively swims at birth,

the only ape with the "diving reflex," and the only hairless ape.

as for humans, it was because our diet had extremely high amounts of C for millions of years when we lived mainly in the sea.

evolution does not support redundancy for long periods.

look into the Carrington Event. massive solar flare back around 1859 (iirc) that cause the aurorae to be visible at the equator. in places it melted telegraph wire and set fire to telegraph stations. so regardless of congressional fuckery, an EMP is quite capable of taking out the grid. i believe one of the major outages a few decades ago corresponded to a smaller solar flare that took out a power station in canada, and poor design and lack of protections allowed a domino effect that took out most of the eastern seaboard.
