Find a local Cattle farmer. Get a price on the processing cost of a full cow, and communicate with your family and frens to see who would be interested in splitting the cost.

Cost may be slightly more, but if you can get a few family and frens to pitch in, the overall cost for a whole Cow or Pig processed is -by far- cheaper.
You may run across issues with people being hesitant to sell it because they might not be a USDA approved processing facility. But fuk dat… They just want to make sure they're getting their tax dollars so they can spend it on ads saying Cow Farts are killing the planet.
