Danke` That is 3 now anon has smoked. Starting to feel comfortable making them. They are a bit tricky.

Started out 14lbs and ended up maybe 8lbs. Mixed the pellets… Apple Pecan. Dry brine 12 hours then 12 on the smoker.

Vacu-sealed half and added to the deep freeze.

I kept the ends moist with 50/50 Apple cider vinegar and h20.
