Text fonts need to be large
One technique I use is to use a blank black template on imgflip, write the text, then import that text to my graphic - then erase the black background

Ask for small things - like put a pussy hat on someone
Don’t ask for elaborate scenarios
The meme generator fonts look best but if you have to use your own use something substantial
Consider a black to transparent gradient behind text to make it pop
