Canadian beef grading is compulsory for the retail market

 

When comparing Canadian beef to its American counterpart, there are a few noticeable differences. The Canada Prime grade is almost identical to the U.S.D.A. Prime grade, with the exception that the Canadian grade does not allow dark colored meat, yellow fat, older animals, or other off-quality characteristics. Similarly, the Canada AAA grade is virtually indistinguishable from the U.S.D.A. grade. These stringent grading standards ensure that Canadian beef meets the highest quality standards.
